Mint Chocolate Dessert Soup

Ingredients:

  • 1 cup whole milk
  • 1 cup heavy cream
  • 4 oz. dark chocolate (good quality, 60%, about 2/3 cup chips, chunks or finely chopped chocolate)
  • 1 tablespoon unsweetened cocoa powder
  • 1 tablespoon granulated sugar
  • 1/4 cup clear creme de menthe liqueur
  • vanilla ice cream
  • warm caramel sauce (optional)
  • mint leaves to garnish

Method of preparation:

In a saucepan, heat the milk and heavy cream over medium-low heat until it just starts to form tiny bubbles around the edges. Be careful not to let it boil.

While the milk mixture is heating, put the dark chocolate, cocoa powder and granulated sugar into a blender.

When the milk mixture is hot, pour it over the chocolate in the mixer. Leave for 30 seconds to allow the chocolate to melt.

Blend on low speed, then gradually increase to high speed until smooth and foamy.

Add the crème de menthe liqueur and continue to blend for a few seconds.

Serve warm in bowls with a scoop of vanilla ice cream.

Drizzle with warm caramel sauce if desired and garnish with mint leaves.
