This salad combines the crunchy texture of fresh cauliflower with the sweetness of carrots and the pungency of onions, all tied together with a creamy and tangy dressing. Ingredients:
- 1 small cauliflower, cut into florets
- 1 carrot, coarsely grated
- 1 small onion, finely chopped
- 2 tablespoons of chopped fresh parsley
- 2 tablespoons mayonnaise
- 1 tablespoon sour cream
- 1 tablespoon lemon juice
- 1 teaspoon honey
- Salt and pepper to taste
Method of cooking:
To prepare the cauliflower: Bring a large pan of salted water to the boil. Add the cauliflower florets and cook for about 5 minutes, until tender but still crunchy. Drain and leave to cool.
Make the dressing: In a small bowl, whisk together the mayonnaise, sour cream, lemon juice, honey, salt and pepper until smooth.
Toss the salad: In a large bowl, toss the cooled cauliflower florets, grated carrot, finely chopped onion and fresh parsley.
Dress the salad: Pour the dressing over the salad and toss to coat evenly.
Chill: Refrigerate the salad for at least 30 minutes before serving to allow the flavours to meld.
