Colorful Vegetable Skewers with Apricots

A great grilling alternative not only for vegetarians – a composition of aromatic vegetables, herbs, and the sweet taste of apricots.

Ingredients

  • Basil – 12 g
  • Red onion – 2 pcs
  • Black pepper – 1 pinch
  • Apricots – 4 pcs
  • Olive oil – 4 tbsp
  • Green pepper – 1 pc
  • Cherry tomatoes – 125 g
  • Salt – 1 pinch
  • Potatoes – 12 pcs
  • Garlic clove – 1 pc

Preparation

Wash the potatoes thoroughly and cook them in their skins in salted water for about 15 minutes, until soft. Drain and let them cool.

Slice the onion into rings. Clean the pepper, remove the seeds, and cut into large pieces. Wash the tomatoes. Cut the apricots in half and remove the pits. Thread the prepared ingredients alternately with the potatoes onto skewers.

Pluck and chop the basil leaves. Press the garlic through a press. Mix both ingredients with olive oil, season with salt and pepper. Brush the skewers with the marinade on all sides, then grill on an aluminum tray on a hot grill for 10 minutes, turning and basting with the remaining basil oil multiple times.
