Coconut Chia Pudding with Dates and Blueberries

A recipe for coconut chia pudding with dates and blueberries. Chia seeds are a valuable source of dietary fiber, which improves lipid metabolism parameters – they lower “bad” cholesterol and raise “good” cholesterol, thus protecting against atherosclerosis.

Ingredients

  • Chia seeds: 10 g (1 tablespoon)
  • Coconut milk: 22 ml (1 and 1/2 tablespoons)
  • Almond milk: 87 ml (about 1/3 cup)
  • Fresh dates: 38 g (about 1 and 1/2 pieces)
  • Blueberries: 78 g (about 1/2 cup)

Preparation

  1. In a saucepan, combine both milks, chia seeds, chopped dates, and cook over low heat until the pudding thickens.
  2. Transfer the pudding to a bowl. Arrange the fruits on top.
