Chilli & Ginger Nuts Snack Recipe

This recipe combines a mix of nuts with a blend of chilli flakes, curry powder, cayenne pepper and ground ginger, all coated in a sweet and spicy egg white mixture. The result is a deliciously addictive snack that’s sure to please.

Ingredients:

  • 1 egg white
  • 1/2 teaspoon chilli flakes
  • 1/2 teaspoon medium curry powder (or gluten-free alternative)
  • 1/2 tsp cayenne pepper
  • 1/2 tsp ground ginger
  • 5 tbsp soft brown sugar
  • 350g mixed nuts

Method of cooking:

Preheat the oven to 160°C (320°F). Line a baking tray with greaseproof paper or lightly grease it.

In a large mixing bowl, whisk the egg whites until frothy.

Add the chilli flakes, medium curry powder, cayenne pepper, ground ginger and soft brown sugar to the egg whites. Whisk well to combine.

Add the mixed nuts to the bowl with the egg white mixture.

Stir well to ensure that all the nuts are evenly coated with the spicy-sweet mixture.

Spread the coated nuts in a single layer on the prepared baking tray.

Bake in the preheated oven for 20-25 minutes, stirring occasionally, until the nuts are golden brown and crispy.

Remove the baking tray from the oven and allow the nuts to cool completely.

When cool, break up any clusters and store the nuts in an airtight container.
