Marinated beet salad

Polish marinated beet salad, also known as ‘buraczki’, is a traditional dish that highlights the earthy sweetness of beets combined with a tangy, slightly sweet marinade. This salad is simple yet flavourful, making it a perfect side dish for a variety of meals. The addition of red onion and a hint of mustard adds a nice depth of flavour.

Ingredients:

  • 1 (16oz) can whole beets
  • 1/4 cup white sugar
  • 1 teaspoon prepared mustard
  • 1/4 cup white wine vinegar
  • 1/4 cup diced red onion

Method of cooking:

Drain the can of whole beets and rinse under cold water.

Slice or julienne the beets, depending on your preference.

In a medium bowl, whisk together the white sugar, prepared mustard and white wine vinegar until the sugar is dissolved and the mustard is fully incorporated.

Add the sliced beets and diced red onion to the bowl of marinade.

Toss until the beets and onions are well coated with the marinade.

Cover the bowl and refrigerate for at least 1 hour to allow the flavours to meld. For best results, leave to marinate overnight.

Toss well before serving to ensure the marinade is evenly distributed.

Serve chilled as a side dish or as part of a main meal.
