It’s best to soak chia seeds the day before, for example, in the evening.
Ingredients:
- 3 heaping tablespoons chia seeds
- 250 ml cow’s milk or plant-based milk
- 2 tablespoons sugar (or to taste)
- Fruits: e.g., mango, raspberries, blueberries, strawberries
Preparation:
Pour the milk over the chia seeds (lightly warmed if you want the pudding to set faster), add the sugar, and mix thoroughly (stir vigorously for the first few minutes to avoid clumping).
Refrigerate for about 1-2 hours, or preferably overnight. Stir occasionally, especially in the initial soaking phase. The longer the chia seeds soak, the more they will swell.
Once thickened, transfer the pudding to two dessert cups or glasses and top with fresh fruits.
