Ceviche is a delicious and refreshing dish made from fresh raw fish or seafood marinated in citrus juices and mixed with various seasonings and vegetables. Here’s a basic recipe for making ceviche:
Ingredients:
- 1 pound of fresh fish or seafood (such as tilapia, shrimp, scallops, or halibut), cut into bite-sized pieces
- 4-5 limes, juiced
- 1 lemon, juiced
- 1 orange, juiced
- 1 small red onion, thinly sliced
- 1-2 jalapeño peppers, seeded and finely chopped
- 1 tomato, diced
- 1/4 cup chopped fresh cilantro
- Salt and pepper to taste
- Optional: avocado slices, cucumber slices, sweet corn kernels
Method of preparation:
In a large bowl, combine the bite-sized pieces of fish or seafood with the freshly squeezed lime, lemon, and orange juice. Make sure all the pieces are submerged in the juice. Cover the bowl and refrigerate for about 30 minutes to 1 hour, or until the fish or seafood is “cooked” by the acidity of the citrus juices. The fish or seafood should turn opaque and firm.
While the fish or seafood is marinating, prepare the vegetables. Thinly slice the red onion, finely chop the jalapeño peppers, dice the tomato, and chop the fresh cilantro.
Once the fish or seafood is “cooked” in the citrus juices, remove it from the refrigerator and drain off most of the excess liquid.
Add the sliced red onion, chopped jalapeño peppers, diced tomato, and chopped cilantro to the bowl with the marinated fish or seafood. Season with salt and pepper to taste.
Gently toss all the ingredients together until well combined.
Serve the ceviche immediately in individual bowls or glasses, garnished with avocado slices, cucumber slices, and/or sweet corn kernels if desired.
