Ingredients
- Breadcrumbs – 110 g
- Onion – 1 piece
- Brown sugar – 40 g
- Barbecue sauce – 250 g
- Cauliflower – 1 head
- Whole wheat flour – 97.5 g
- Granulated garlic – 2 teaspoons
- Dijon mustard – 1 tablespoon
- Soy milk – 185 ml
- Apple cider vinegar – 60 ml
- Olive oil – 2 tablespoons
- Tomato passata – 400 g
- Black pepper – a pinch
- Sweet paprika – 2 teaspoons
- Salt – a pinch
- Dried plums – 5 pieces
- Water – 125 ml
Preparation
In a bowl, combine whole wheat flour with soy milk, water, granulated garlic, sweet paprika, olive oil, and salt. Mix with a whisk until well combined. In a separate bowl, place breadcrumbs. Dip each cauliflower floret generously into the batter, ensuring they are completely coated, then roll them in breadcrumbs. Place the prepared cauliflower wings on a baking sheet lined with parchment paper.
Bake the cauliflower wings for about 25 minutes in an oven preheated to 180°C (350°F). In a pan, heat olive oil and sauté diced onion until translucent. Add sliced dried plums and sauté for about 5 minutes. Add tomato passata, apple cider vinegar, brown sugar, Dijon mustard, sweet paprika, salt, and black pepper. Cook the sauce until the onion and plums break down, about 10-15 minutes.
Blend the sauce using a hand blender until smooth. Transfer the partially baked cauliflower wings to a dish with the blended BBQ sauce and coat them thoroughly. Place the coated wings back onto the baking sheet lined with parchment paper and bake for an additional 20 minutes in the preheated oven at 180°C (350°F).
If there is any leftover homemade BBQ sauce after preparing the dish, let it cool, transfer it to a jar, and store it in the refrigerator for up to 2 weeks.
