Carrot Omelette

Delicious, fluffy, and simple! That’s exactly what this sweet carrot omelette is, with the addition of a cookie-flavored protein supplement.


  • Eggs: 2 pieces
  • Whole wheat flour: 20 g
  • Carrot: 50 g
  • Cinnamon: 1 pinch
  • Olive oil: 5 ml
  • Salt: 1 pinch
  • Natural skyr yogurt: 100 g
  • Pecan nuts: 20 g
  • Cookie-flavored protein supplement: 10 g


Step 1: Prepare the batter Peel and grate the carrot finely. Beat the eggs with a pinch of salt until fluffy. Mix the flour with the protein supplement and cinnamon. Add the dry ingredients and grated carrot to the beaten eggs and gently mix everything with a spatula.

Step 2: Fry the omelette Thoroughly grease a pan with olive oil, pour the batter into it, and cover with a lid. Fry the omelette for a few minutes, then carefully flip it over when the bottom is golden brown. Cover the pan again and fry the omelette until the other side sets.

Step 3: Serve the omelette Transfer the omelette to a plate, spread skyr on half of it. Chop the pecan nuts and sprinkle most of them over the yogurt. Fold the omelette in half, sprinkle the remaining nuts on top, and serve with your favorite fruits.
