Cajun Cashews

Ingredients:

  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon chilli garlic sauce (such as Sriracha®)
  • 3/4 teaspoon ground cumin
  • 1/2 teaspoon paprika powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper, or more to taste
  • 2 cups whole cashews
  • 1 tablespoon of coarse salt, or to taste

Method of preparation:

Preheat the oven to 150°C (300°F).

In a large frying pan, melt the unsalted butter over medium heat.

Add the olive oil, Worcestershire sauce, chilli garlic sauce, ground cumin, paprika, garlic powder and cayenne pepper.

Stir until well combined and fragrant.

Add the whole cashews to the frying pan and toss to coat evenly with the spice mixture.

Spread the coated cashews on a baking tray lined with greaseproof paper.

Bake in the preheated oven for about 15 minutes, stirring occasionally to ensure even roasting.

Remove from the oven and sprinkle with coarse salt to taste while they’re still warm.

Allow the cashews to cool before serving. They will get crunchier as they cool.
