- Whole wheat tortilla: 1 piece
- Egg: 1 piece

- Cheddar cheese: 20 g
- Chives: 1 teaspoon
- Arugula: 1 handful
Salsa Fresca
- Red tomato: 1 piece
- Lemon juice: 1 tablespoon
- Red onion: 0.25 piece
- Jalapeño pepper: 0.25 piece
- Fresh cilantro: 1 tablespoon
- Salt: a pinch
Preparation
Salsa Fresca
Finely dice the tomato, red onion, and jalapeño pepper. Transfer all salsa ingredients to a bowl and mix well. Place the bowl in the refrigerator for about 15-30 minutes to chill the salsa.
Quesadilla
Step 1: Prepare the Scrambled Eggs
Melt butter in a pan. Crack the egg and scramble it with a spatula until it reaches your preferred consistency. Just before removing the scrambled egg from the heat, season it with salt and pepper to taste and mix again.
