Easy-to-make marinade, aromatic sauce, vegetables, and you can already taste Mexican cuisine in your home.
Ingredients
Beef Sirloin – 1 kg
Marinade
- Oil – 60 ml
- Black pepper – 1 pinch
- Lemon juice – 2 tbsp
- Soy sauce – 60 ml
- Fresh cilantro – 45 g
Vegetables
- Red bell pepper – 1 pc.
- Green bell pepper – 1 pc.
- Yellow bell pepper – 1 pc.
- Shallot – 1 pc.
- Jalapeño peppers – 4 pcs.
- Whole cumin – 1 tbsp
- Oil – 2 tbsp
- Ground hot paprika – 1 tbsp
- Black pepper – 1 pinch
- Fresh cilantro – 22 g
Tortillas
- Onion – 1 pc.
- Tortilla – 8 pcs.
- Whole cumin – 1 pinch
- Sour cream (18%) – 180 ml
- Lime juice – 40 ml
- Serrano ham – 80 g
- Fresh cilantro – 22 g
Preparation
Marinade Cut the beef sirloin into strips along the fibers and place in a container, pour lemon juice over the meat, then add half a bunch of chopped cilantro. Add Indonesian soy sauce, 60 ml of oil, and a pinch of pepper to the meat. Coat each piece of meat thoroughly with the marinade. Place the meat in the refrigerator for a minimum of 20-60 minutes.
Vegetables Season the sliced peppers with ground hot paprika and crushed cumin. Add sliced shallot, jalapeño peppers cut into rings, half a bunch of chopped fresh cilantro, a little oil, and a small amount of pepper. Mix.
Heat oil in a deep pan, add the vegetables. Fry for 5-10 minutes, stirring occasionally (do not fry too many vegetables in the pan, prevent them from steaming). Transfer the fried vegetables to a colander to drain excess fat and let cool.
Tortillas Heat the tortilla on a hot pan (without fat), turning it occasionally. The tortilla should not be crispy, just lightly browned and heated.
Beef On another heated deep pan, add the marinated meat without adding fat. Fry, stirring constantly.
Assembling Tortillas Spread sour cream (or guacamole with tabasco) on one side of the slightly browned tortilla. Sprinkle chopped onion in the middle of the tortilla, arrange cooled vegetables, fried beef, and thinly sliced serrano ham. Sprinkle all ingredients with a little crushed cumin and drizzle with a small amount of lime juice. Finally, add a few sprigs of fresh cilantro. Roll up the tortilla, cut it in half, and serve on a plate decorated with chili pepper, ground hot paprika, and cumin. Repeat with the remaining tortillas.
