Avocado, Tomato, and Omelette Tortilla

A delicious breakfast tortilla, crispy on the outside with juicy tomato and avocado, and melty cheese inside. Cooked together with an omelette for quick preparation and excellent results.

Ingredients:

  • 2 tortillas
  • 2 teaspoons butter
  • 1 avocado
  • 1 tomato
  • 2 eggs
  • several leaves of baby spinach
  • 50 g shredded yellow mozzarella cheese

Preparation:

Prepare a frying pan with a diameter similar to the size of the tortillas. Peel the avocado, remove the pit, and slice it thinly. Slice the tomato into thin slices. Prepare the first tortilla: spread a teaspoon of butter evenly over the bottom of the frying pan.

In a bowl, beat the eggs with salt and pepper. Pour onto the frying pan. Place a tortilla on top and cook until the egg sets, about half a minute. Carefully flip to the other side using a wide spatula.

Arrange tomato slices, sprinkle with cheese, add baby spinach leaves and avocado slices on top of the tortilla. Season with salt and pepper. Heat for a moment, checking the underside of the tortilla for desired crispiness. Fold in half, gently pressing with the spatula, and heat for another moment. Transfer to a plate, and repeat with the second tortilla.
