Avocado Toast with Cheese and Pomegranate

  • Bread, e.g., whole wheat
  • 1 avocado
  • 50 g salad cheese or feta
  • 1/4 pomegranate
  • Mint leaves
  • Extra virgin olive oil, salt, and pepper


Toast the bread in a toaster if you prefer it crispy. Peel the avocado, cut into pieces, and mash slightly with a fork. Season with salt, pepper, and drizzle with olive oil.

Spread the avocado mixture on the toasted bread. Crumble the cheese on top and sprinkle with pomegranate seeds. Add mint leaves and drizzle with additional olive oil.
