Ingredients:
- 4 medium heirloom tomatoes
- 3 medium avocados
- 1 large bunch fresh basil
- 1 juiced lemon
- 1 tablespoon organic extra virgin olive oil
- aged balsamic vinegar, optional
- Sea salt
- Freshly ground pepper
Method of cooking:
Slice the heirloom tomatoes and avocados into 1/4 inch thick slices.
Arrange the tomato and avocado slices on a platter in alternating layers, adding fresh basil leaves between each layer.
Drizzle with lemon juice and organic extra virgin olive oil.
If desired, add a few drops of aged balsamic vinegar for extra depth of flavour.
