Asian-Style Pork Knuckle

A perfect blend of meat marinated in beer, soy sauce, honey, and spices. This is the way to prepare pork knuckle in an oriental style.

Ingredients

  • Black pepper: 1 pinch
  • Bay leaves: 2 pieces
  • Allspice berries: 2 pieces
  • Pork knuckle: 400 g
  • Salt: 1 pinch

Marinade:

  • Garlic cloves: 3
  • Honey: 3 tablespoons
  • Black pepper: 1 pinch
  • Beer: 400 ml
  • Salt: 1 pinch
  • Soy sauce: 75 g
  • Ground chili: 1 pinch

Preparation

  1. Wash the pork knuckles, place them in a large pot, add the spices, and pour in enough water to cover the knuckles. Bring to a boil, reduce the heat, and simmer until tender, about 2 to 3 hours. Remove and let cool.
  2. Finely chop the garlic. Prepare the marinade with 250 ml of beer and the remaining ingredients.
  3. Score the skin on the knuckles, pour the marinade over them, and set aside for at least 2 hours. Turn the knuckles in the marinade occasionally.
  4. Preheat the oven to 200°C and set to grill mode. Remove the knuckles from the marinade, place them on a baking sheet or in an ovenproof dish, and bake for about 40 minutes, basting with the juices produced during baking and the remaining 150 ml of beer.
