Delicious leek soup straight from Polish cuisine. Prepare a healthy and tasty soup that will delight any food enthusiast.
Ingredients:
- 250 g ground pork (e.g., from ham)
- 1 tablespoon butter
- 1 tablespoon olive oil
- 250 g leeks
- 1/3 teaspoon turmeric
- 1/3 teaspoon sweet paprika
- 1 liter broth (vegetable or chicken)
- 400 g potatoes
- 60 ml 18% cream
- Fresh herbs
Preparation:
- In a large pot, heat olive oil and butter. Brown the ground pork thoroughly, seasoning with salt and pepper.
- Trim the toughest green ends from the leeks. Cut the white and light green parts lengthwise and rinse thoroughly under water. Chop finely on a cutting board and add to the pot with the browned meat. Sauté for a few minutes until the leeks soften, stirring occasionally.
- Add turmeric and sweet paprika.
- Pour in the broth and bring to a boil. Cover and simmer for about 10 minutes.
- Peel and dice the potatoes, then add them to the soup. Cover and cook for another 15 minutes until the potatoes are tender.
- Finally, stir in the cream and fresh herbs. Remove from heat and serve hot.
