Ingredients:
- bread (e.g., whole grain), 1 slice
- avocado, 1
- salad cheese or feta, 50 g
- pomegranate (quarter), 1/4
- mint leaves
- extra virgin olive oil, salt and pepper
Preparation:
Toast the bread if you prefer it crispy. Peel the avocado, cut it into pieces, and mash slightly with a fork. Season with salt, pepper, and drizzle with olive oil.
Spread the avocado mixture on the bread. Crumble the cheese on top and sprinkle with pomegranate seeds. Add mint leaves and drizzle with additional olive oil.
