Thai Corn Fritters

These fritters are not only tasty but also versatile. They can be served as a snack on their own or dipped in a tangy sweet chilli sauce to add a touch of spice. Ingredients:

  • 2 large eggs
  • 2/3 cup (100g) plain flour
  • 2 garlic cloves, minced
  • 1 teaspoon caster sugar
  • 1 tablespoon Thai fish sauce
  • 270g tin of sweetcorn, drained
  • 2 spring onions, chopped
  • 2 tablespoons sunflower oil
  • 2 tablespoons sweet chilli sauce, to serve

Method of cooking:

Whisk the eggs in a large bowl until smooth. Add the plain flour, chopped garlic, caster sugar and Thai fish sauce. Mix well to form a batter.

Stir in the drained sweetcorn and finely chopped spring onions. Mix until the corn and onions are evenly distributed throughout the batter.

Heat the sunflower oil in a large frying pan over a medium heat. Make sure the oil is hot enough before adding the batter to ensure the fritters cook evenly and become crispy.

Spoon the batter into the pan to form small fritters, about 2-3 tablespoons of batter per fritter. Flatten slightly with the back of a spoon.

Cook the fritters for 2-3 minutes on each side or until golden brown and cooked through. You may need to cook them in batches to avoid overcrowding the pan.

When cooked, transfer the fritters to a plate lined with kitchen roll to drain any excess oil.

Serve hot with sweet chilli sauce on the side for dipping.
