Cauliflower nuggets are cauliflower florets fried or baked with spices, served with yogurt and pomegranate. A delicious and healthy snack!
Ingredients
- Cauliflower: 1/2 head
- Pomegranate: 1/4, seeds removed
- Natural yogurt: 180 g
- Extra virgin olive oil
- Spice mix (kebab-gyros or garam masala): 1.5 tablespoons
- Pinch of cayenne pepper
- Salt and pepper
- Cilantro or parsley
Preparation
Bring a large pot of salted water to a boil. Cut the cauliflower into medium-sized florets. Add them to the boiling water and cook until tender, about 10 minutes. Drain well.
Meanwhile, deseed the pomegranate: cut off the top and bottom with a knife, score the skin vertically around the fruit, break it open, and gently remove the seeds.
On a plate, spread out the spice mix and roll the cooked cauliflower in it. Drizzle with 1 tablespoon of extra virgin olive oil and toss to coat. Season with ground pepper and salt.
Heat a frying pan with a bit of olive oil and quickly sear the cauliflower on each side. You can also use a grill pan, air fryer, or grill in the oven.
Spread yogurt on a serving plate – about 3 tablespoons per plate. Add the cauliflower nuggets, sprinkle with pomegranate seeds, and garnish with cilantro or parsley.
