With caramelized bananas in orange juice.
Ingredients:
Omelette:
- 2 eggs
- A small pinch of salt
- 2 tablespoons all-purpose flour
- A small piece of butter
Caramelized Bananas:
- 4 tablespoons white sugar
- Juice of 1/4 lime
- Juice of 1/2 orange
- 2 tablespoons orange liqueur
- 1 banana, sliced
Preparation:
Separate the egg whites from the yolks. Sift the flour into a small bowl. Beat the egg whites with a pinch of salt on high speed until stiff peaks form. Reduce the speed to medium and gradually add the mixed yolks, beating continuously for about half a minute. Lower the speed to minimum and gradually add the sifted flour, beating briefly for about 10 seconds.
Immediately start heating a non-stick pan (18-20 cm in diameter) on medium heat for about half a minute. Using a fork, coat a small piece of butter and quickly grease the bottom and sides of the pan. Remove any excess butter; the pan should only be lightly greased. Pour in the beaten mixture, reduce the heat to medium-low, and cook the omelette (uncovered) for about 3-4 minutes until it begins to gently “sizzle.”
Flip the omelette using your preferred technique: tossing, using two spatulas with help from another person, or sliding it onto a plate, covering with the inverted pan, and flipping it back into the pan. Cook on the other side for about 2 minutes. Transfer to a plate, sprinkle with powdered sugar, and serve with your favorite toppings (see below).
Caramelized Bananas in Orange Juice:
Heat a saucepan and add the sugar, drizzle with lime juice, mix, and heat without stirring for about a minute on medium heat. The sugar should dissolve and form a thick, bubbling syrup. When the syrup begins to brown (after about a minute of cooking), add the orange juice and bring to a boil while stirring. Add the banana slices and cook for a short time on lower heat. Finally, pour in the liqueur, mix, and remove from heat.
