This salad is a superfood combo. Broccoli is rich in vitamins and minerals, while raisins add natural sweetness and an energy boost. The cashew-based dressing gives you a creamy texture without the heaviness of traditional dairy. It’s indulgence without the guilt!
Ingredients:
- 6 cups broccoli (cut into bite-sized pieces)
- 1 cup sunflower seeds
- 1/2 cup red onion, finely chopped
- 1/2 cup raisins
- 1 cup raw cashews (soaked for 1-2 hours)
- 1/3 cup water
- 1 1/2 tablespoons apple cider vinegar
- 1 tablespoon lemon juice
- 1 tablespoon maple syrup (or honey)
- 1 tablespoon shallot (chopped, optional)
- 1 clove of garlic (chopped)
- 1/2 teaspoon sea salt
- 1/2 teaspoon Dijon mustard
Method of preparation:
Cut the broccoli florets into bite-sized pieces and place in a large salad bowl.
Soak the raw cashews in water for at least 1-2 hours to soften.
Place the soaked cashews, water, cider vinegar, lemon juice, maple syrup, shallot (if using), garlic, sea salt and Dijon mustard in a blender.
Blend until smooth and creamy.
Add the sunflower seeds, red onion and raisins to the broccoli in the salad bowl.
Pour the dressing over the salad and toss to coat.
Chill in the fridge for at least an hour to allow the flavours to meld.
Serve chilled as a refreshing and healthy side dish.
