Cranberries add a festive touch, making this starter perfect for holiday parties or when you want to add a seasonal touch to your menu. This recipe offers an elegant presentation of melted Brie and cranberry compote on a crusty baguette, yet it’s incredibly easy to make.
Ingredients:
- 1 cup fresh cranberries
- 2 tablespoons sugar
- 2 tablespoons apple juice
- 2 tablespoons red wine
- pinch each of ground clove, ginger and allspice
- 10 slices baguette
- 1 tablespoon unsalted butter, melted
- garlic powder
- poultry seasoning
- fine sea salt
- 4 oz brie, cut into small pieces to fit your toasts
- fresh mint leaves to garnish (optional)
Method of preparation:
Preheat the oven to 175°C (350°F).
In a saucepan over a medium heat, combine the cranberries, sugar, apple juice and red wine. Add a pinch of ground clove, ginger and allspice.
Cook until the cranberries burst and the mixture thickens into a compote, about 10 minutes. Set aside to cool.
Brush each baguette slice with melted butter and sprinkle with garlic powder, poultry seasoning and a pinch of sea salt.
Toast the baguette slices in the oven until golden brown, about 5-7 minutes.
Once the baguette slices are toasted, place a slice of brie on each one.
Return to the oven until the brie begins to melt, about 2-3 minutes.
Top the melted Brie with the cranberry compote.
Garnish with fresh mint leaves if desired.
