The combination of fish sauce, sesame oil and Chinese five-spice creates a symphony of savoury, nutty and aromatic notes that will tantalise your taste buds. This marinade is not just for chicken! Use it on beef, pork or even vegetables to give them a unique Asian flavour.
Ingredients:
- 3 tablespoons fish sauce
- 2 tablespoons sesame oil
- 2 tablespoons sunflower seed oil
- 1 tablespoon lemon juice
- 1 teaspoon Chinese five spice powder
- 1 teaspoon salt
- Optional: Add a touch of sweetness with honey or sugar, and some heat with a dash of chilli flakes or minced garlic for an extra kick.
Method of preparation:
In a mixing bowl, whisk together the fish sauce, sesame oil, sunflower seed oil, lemon juice, Chinese five-spice powder and salt until well combined.
Taste the marinade and adjust the seasoning if necessary. For a sweeter marinade, add a little honey or sugar. For a spicy kick, add some chilli flakes or minced garlic.
Place the chicken pieces in a large resealable bag or shallow dish.
Pour the marinade over the chicken, making sure each piece is well coated.
Close the bag or cover the dish and marinate in the fridge for at least 1 hour, preferably overnight, to allow the flavours to fully infuse.
When ready to grill, remove the chicken from the marinade and allow any excess to drip off.
Preheat your barbecue to medium heat and lightly oil the grid.
Grill the chicken, turning occasionally, until cooked through and has nice grill marks, about 6-8 minutes per side, depending on thickness.
