Chicken curry is one of the most delicious dishes in Indian cuisine. A great idea for a quick dinner. Chicken curry tastes excellent served with basmati rice or jasmine rice. It also goes very well with naan bread or even roasted potatoes.
Ingredients
- Chicken breast fillet: 600 g
- Chicken broth cubes: 2
- Water: 1.15 liters
- Onions: 2 pieces
- Red bell pepper: 1 piece
- Peas: 1 can
- Natural yogurt: 200 grams
- Oil: 4 tablespoons
- Curry powder: 1 heaping tablespoon
- Basmati rice: 400 grams
- Salt
- Pepper
- Coriander
- Green asparagus beans (cooked): a handful
Preparation
- Wash and dice the chicken breast fillets, lightly season with salt. Also, chop the onions into small cubes and slice the bell pepper into strips.
- Meanwhile, cook the rice according to the instructions on the package.
- In a heated oil, sauté the onions, add the meat and fry for a few minutes. Then add the bell pepper and continue frying for a few more minutes.
- Prepare the broth using the broth cubes and water.
- Add half a cup of water to the meat and vegetables, sprinkle with curry powder, and mix well.
- Pour in the broth. Once everything boils, add the peas and asparagus beans.
- Simmer covered for 15 minutes.
- Finally, add yogurt and season with pepper and coriander. You can thicken the sauce with water mixed with flour if desired.
- Serve with rice.
