Ingredients

Quesadilla

  • Whole wheat tortilla: 1 piece
  • Egg: 1 piece
  • Butter: 0.5 teaspoon
  • Cheddar cheese: 20 g
  • Chives: 1 teaspoon
  • Arugula: 1 handful

Salsa Fresca

  • Red tomato: 1 piece
  • Lemon juice: 1 tablespoon
  • Red onion: 0.25 piece
  • Jalapeño pepper: 0.25 piece
  • Fresh cilantro: 1 tablespoon
  • Salt: a pinch

Preparation

Salsa Fresca

Finely dice the tomato, red onion, and jalapeño pepper. Transfer all salsa ingredients to a bowl and mix well. Place the bowl in the refrigerator for about 15-30 minutes to chill the salsa.

Quesadilla

Step 1: Prepare the Scrambled Eggs

Melt butter in a pan. Crack the egg and scramble it with a spatula until it reaches your preferred consistency. Just before removing the scrambled egg from the heat, season it with salt and pepper to taste and mix again.

Step 2: Assemble the Quesadilla

Grate the cheddar cheese using a coarse grater. Finely chop the chives. Spread the cheese over half of the tortilla, sprinkle with chives, top with scrambled egg and a handful of arugula. Fold the tortilla in half, ensuring that the dry part of the tortilla completely covers the other ingredients.

Step 3: Fry and Serve the Quesadilla

Fry the assembled quesadilla on a dry pan for about 4-5 minutes on each side until golden brown. Serve the quesadilla cut into smaller triangles, hot, with the previously prepared salsa fresca.
