Burger with Chili and Onion Chutney

Ingredients

Onion Chutney

  • Onion: 5 pieces
  • Balsamic vinegar: 3 tablespoons
  • Butter: 1 tablespoon
  • Honey: 2 tablespoons
  • Olive oil: 1 tablespoon
  • Salt: a pinch

Burgers

  • Bacon slices: 80 g
  • Hamburger buns: 4 pieces
  • Garlic cloves: 2 pieces
  • Ground beef-pork mixture: 500 g
  • Pickled cucumber: 50 g
  • Olive oil: 20 ml
  • Red chili pepper: 1 piece
  • Iceberg lettuce: 160 g
  • Salt: a pinch

Preparation

Step 1: Cooking Onion Chutney

Peel and slice the onions. Heat olive oil and butter in a pan. Sauté the onion slices for 5 minutes over medium heat until softened. Season with salt. Add honey. Caramelize the onions for 1 minute, flipping. Pour in the vinegar and cook for about 5 minutes until the liquid almost completely evaporates. Stir continuously. Season to taste and set aside.

Step 2: Forming Burgers

Drain and slice the pickled cucumbers into strips. Wash and dry the lettuce. Peel garlic, clean and deseed the chili pepper. Finely chop both ingredients, knead with the ground meat mixture. Season with salt and form 4 flat patties.

Step 3: Cooking Burgers

Sauté the bacon in a pan without added fat for 2-3 minutes until crispy, then set aside. Pour olive oil into the pan, fry the patties for about 5 minutes on each side until crispy, pressing down a few times with a burger press or a small lid. Toast the burger buns in the oven. Cut the buns in half. On the bottom of each bun, place a lettuce leaf and a few cucumber strips. Spread onion chutney on them and place a burger and 2 bacon slices, then cover with the top part of the bun. Serve immediately after preparation.
