Ingredients:
- 500g lamb mince
- 2 tsp ground coriander
- 2 tsp cumin seeds
- 1 red chilli, deseeded and finely chopped
- A handful of parsley, chopped
- 2 rosemary sprigs, leaves stripped and chopped
- A good splash of Worcestershire sauce
- 1 egg, lightly beaten
- 100g feta cheese, cut into 16 cubes
- 1 tbsp sunflower oil
For the Minty Yogurt Dip:
- 200ml natural yogurt
- A small bunch of mint leaves, chopped
Method of preparation:
In a large bowl, mix together the lamb mince, ground coriander, cumin seeds, chopped red chilli, parsley, rosemary, and Worcestershire sauce. Add the lightly beaten egg to bind the mixture.
Divide the mixture into 8 equal portions. Flatten each portion into a patty and press two cubes of feta cheese into the center of each patty, then mold the meat around the cheese to enclose it.
Heat the sunflower oil in a frying pan over medium heat. Cook the patties for about 5-7 minutes on each side or until they are cooked to your liking.
While the burgers are cooking, mix the natural yogurt with the chopped mint leaves in a small bowl.
Serve the lamb and feta burgers hot with the minty yogurt dip on the side.
