Ingredients
Waffles
- Sugar – 50 g
- Eggs – 4 pieces
- Butter – 50 g
- Baking powder – 1 teaspoon
- Rum – 50 ml
- Vanilla – 3 g
- Coconut flakes – 100 g
- Coconut milk – 400 ml
- All-purpose flour – 200 g
Mango Sauce
- Powdered sugar – 30 g
- Mango – 2 pieces
- Rum – 30 ml
Preparation
Step 1: Prepare the Batter for Coconut Waffles Scrape the seeds from the vanilla bean and heat the coconut milk with butter and vanilla seeds over low heat until the mixture is completely liquefied (if the mixture is too hot, let it cool). Beat egg whites with sugar until stiff peaks form. Add egg yolks, beat for a moment. Pour in the cooled milk, gently combine all ingredients. Mix flour with coconut flakes and baking powder, then sift into the egg mixture. Mix thoroughly, finally adding rum.
Step 2: Bake the Waffles Bake the waffles until golden brown in a preheated waffle iron.
Step 3: Blend the Mango Wash and peel the mangoes, then remove the flesh from the pit. Blend the flesh with sugar and rum until smooth.
Pour the warm waffles with mango sauce.
