Marinated pieces of meat and cocktail tomatoes, served with a cottage cheese dip, guarantee a successful barbecue.
Ingredients
- Fresh basil – 1 teaspoon
- Onion – 3 pieces
- Black pepper – 1 pinch
- Olive oil – 50 ml
- Cocktail tomatoes – 300 g
- Fresh rosemary – 1 teaspoon
- Pork shoulder – 500 g
- Garlic – 2 cloves
Dip
- Black pepper – 1 pinch
- Cumin – 0.25 teaspoon
- Salt – 1 pinch
- Chopped green onions – 1 tablespoon
- 18% sour cream – 6 tablespoons
- Semi-fat cottage cheese – 4 tablespoons
- Garlic – 1 clove
Preparation
Cut the meat into pieces and transfer to a bowl. Combine olive oil, finely chopped garlic, rosemary, basil, and black pepper (to taste), add to the meat, and mix well. Set aside in the refrigerator for 30 minutes.
Thread the soaked wooden skewers alternately with pieces of meat, cocktail tomatoes, and onion eighths. Brush the tomatoes and onions on the skewers with the remaining marinade from the bowl. Grill on all sides until the meat turns golden brown. Combine cottage cheese with sour cream until smooth. Add finely chopped garlic and green onions. Season with cumin, salt, and pepper to taste.
