Ingredients
- mascarpone cheese (700g)
- eggs (4 large or 5 regular)
- ladyfinger biscuits (400g, 2 packages)
- granulated sugar (60g)
- cocoa powder (50g)
- liqueur (70ml, preferably amaretto)
- strong, cold coffee (300ml)
Preparation
Beat the egg yolks with sugar until light and fluffy. Add mascarpone cheese in two batches, mixing quickly at medium speed or by hand, just until combined. Overmixing mascarpone can cause it to curdle.
In a separate bowl, beat the egg whites until stiff peaks form. Gently fold the beaten egg whites into the mascarpone mixture. Combine the coffee with the liqueur. Dip the ladyfinger biscuits into the coffee mixture for a few seconds (just enough to moisten them; prolonged soaking may cause them to disintegrate). Arrange them on the bottom of a rectangular dish or a 25×21 cm baking pan.
Layer the mascarpone mixture over the ladyfingers, then dust with cocoa powder (use a sieve). Repeat the layers: ladyfingers, mascarpone mixture, cocoa powder, ladyfingers, mascarpone mixture.
Finish with a dusting of cocoa powder on top. Tiramisu tastes best after spending a night in the refrigerator.
