Wild Garlic Butter Tear & Share Rolls are a delicious and aromatic bread that’s perfect for sharing. These rolls are made with a soft, fluffy dough enriched with milk and butter, then smothered in a homemade wild garlic butter that gives them a subtle, earthy flavour.
Ingredients:
- TEAR & SHARE ROLLS
- 500ml semi-skimmed milk
- 1 x 7g sachet dried yeast
- 1 tablespoon liquid honey
- 800g plain flour, plus extra for dusting
- 100g unsalted butter, room temperature
- RAMSONS BUTTER
- 200g wild garlic leaves
- 500g unsalted butter, softened
Method of cooking:
For the rolls:
Heat the milk in a saucepan over a low heat until lukewarm, then remove from the heat. Stir in the yeast and honey and leave to stand for a few minutes to activate the yeast.
Pour the flour into a large mixing bowl. Make a well in the centre and pour in the yeast milk. Mix, then add 100g of room temperature butter. Knead for 10 minutes or until smooth and elastic.
Put the dough into a greased bowl, cover with a damp cloth and leave to rise in a warm place for 1 hour, or until doubled in size.
Pat the dough down and divide into equal pieces. Roll each piece into a ball and place close together in a baking tin.
Cover with a damp cloth and leave to rise again for 30-40 minutes.
Preheat the oven to 190°C/375°F/gas 5. Once risen, bake for 25-30 minutes or until golden and cooked through.
To make the wild garlic butter:
Thoroughly wash and dry the wild garlic leaves.
Blend or chop the bear’s garlic leaves, then mix with 500g of room temperature butter until well blended.
Once the rolls have been baked, brush them generously with the bear’s garlic butter while they’re still warm.
