Unwrap the joy of bright colours and bold flavours with our Vegetarian Fajitas, a dish that’s as pleasing to the eye as it is to the palate. This recipe is a celebration of fresh vegetables and aromatic spices, wrapped in the warm embrace of soft tortillas.
Ingredients:
- 400g tin of black beans, drained
- Small bunch of coriander, finely chopped
- 4 large or 8-12 small flour tortillas
- 1 avocado, sliced, or 1 small jar of guacamole
- 2 tablespoons sour cream or crème fraîche
For the fajita mix:
- 1 red and 1 yellow bell pepper, sliced
- 1 tablespoon oil
- 1 red onion, thinly sliced
- 1 clove of garlic, crushed
- ½ tsp chilli powder
- ½ tsp smoked paprika powder
- ½ tsp ground cumin
- Juice of 1 lime
Method of cooking:
Heat the oil in a large frying pan over a medium heat.
Add the red onion and pepper and sauté until soft.
Stir in the crushed garlic, chilli powder, smoked paprika and ground cumin. Cook for a further minute until fragrant.
Squeeze in the lime juice and continue to cook for a few minutes. Remove from the heat.
Heat the tortillas in a dry pan, oven or microwave according to the package instructions.
Lay out the warm tortillas and divide the fajita mix evenly between them.
Top with black beans, sliced avocado or guacamole and a sprinkling of chopped coriander.
Serve the fajitas with a dollop of sour cream or crème fraîche on the side.
