Vegetable Fries with Sesame Dip

Prepare fries from beets, parsnips, sweet potatoes, and kohlrabi with a sesame dip! Serve them as a snack or as a side dish!

Ingredients

For the Fries:

  • Sweet potato – 450 g
  • Beet – 300 g
  • Kohlrabi – 300 g
  • Olive oil – 3 tablespoons
  • Ground paprika (hot) – 1 teaspoon
  • Parsnip – 300 g
  • Sea salt – 1 pinch
  • Dried thyme – 1 teaspoon

For the Sesame Dip:

  • Soy sauce – 1 tablespoon
  • Sea salt – 1 pinch
  • Sour cream (18%) – 200 g
  • White sesame seeds – 3 tablespoons

Preparation

Step 1: Bake the Vegetables

  1. Preheat your oven to 200°C (392°F).
  2. Peel and cut the beets, parsnips, sweet potatoes, and kohlrabi into sticks about 1.5 cm thick.
  3. In a bowl, mix the beets and parsnips with half of the thyme, paprika, and olive oil. Season with a pinch of sea salt.
  4. Spread the beets and parsnips on a baking sheet and bake for 20 minutes.

Step 2: Toast the Sesame Seeds

  1. Mix the sweet potato and kohlrabi sticks with the remaining thyme, paprika, and olive oil. Season with a pinch of sea salt and set aside.
  2. In a dry skillet, toast the sesame seeds over medium heat until they start to release their aroma. Let them cool slightly, then crush them in a mortar with a generous pinch of sea salt.

Step 3: Prepare the Dip

  1. Turn the beets and parsnips on the baking sheet.
  2. Add the sweet potatoes and kohlrabi to the sheet, spread everything evenly, and bake for another 10 minutes.
  3. Turn the vegetables again and bake for an additional 5-10 minutes until the fries are tender and lightly browned.
  4. In a bowl, mix the sour cream with the crushed sesame seeds and soy sauce.

Serve the vegetable fries hot with the sesame dip. Enjoy your delicious and healthy snack!
