Tres Leches Cake (Three Milks Cake)

When we think about making a cake for a party, we always make sure that the recipe guarantees great taste. Three Milks Cake not only tastes great, it looks great on the table too.

Ingredients:

  • 5 eggs, separated
  • 2 cups white sugar, divided
  • 2 teaspoons vanilla extract, divided
  • 1 cup self-raising flour
  • 1 (14 fluid ounce) can sweetened condensed milk
  • 1 (12 fluid ounce) can evaporated milk
  • 1 cup milk
  • 3 egg whites

Preparation:

Preheat the oven to 175°C (350°F). Grease and flour a 9×13 inch baking dish or cake pan.

In a large mixing bowl, beat the egg yolks with 1 1/2 cups of the white sugar until light and fluffy. Stir in 1 teaspoon vanilla extract. Gradually fold in the self-rising flour until well combined.

In another bowl, beat the egg whites until stiff. Gently fold the beaten egg whites into the egg yolk mixture until just combined.

Pour the mixture into the prepared baking tin and spread evenly. Bake in the preheated oven for 25 to 30 minutes, or until a toothpick inserted in the centre of the cake comes out clean.

While the cake is baking, make the tres leches mixture. In a separate bowl, combine the sweetened condensed milk, evaporated milk, whole milk and remaining 1 tsp vanilla extract. Mix until well combined.

Once the cake is baked and while it’s still warm, pierce the top of the cake all over with a fork. Slowly pour the tres leches mixture over the warm cake, allowing it to soak in completely. Leave the cake to cool to room temperature.

In a clean mixing bowl, beat the egg whites until stiff. Gradually add the remaining 1/2 cup white sugar and continue to beat until stiff peaks form. Spread the meringue evenly over the top of the cake.

Place the cake under the broiler for 1 to 2 minutes or until the meringue is lightly browned. Watch carefully to avoid burning.

Remove from the oven and allow to cool completely before slicing and serving.
