We’ll reveal this secret in the article below.
Ingredients
- Cherry tomatoes – 100 g
- Grated Parmesan cheese – 60 g
- Red bell pepper – 1 piece
- Red onion – 1 piece
- Garlic clove – 1 piece
- Olive oil – 30 ml
- Balsamic vinegar – 20 ml
- Fresh basil – 5 g
- Salt – 3.5 g
- Black pepper – 1 g
- Tortellini filled with ricotta – 250 g
Preparation
Step 1: Prepare the Tortellini In a pot, bring water to a boil for the tortellini and add salt to make it taste like seawater. Once boiling, add the dumplings and cook until al dente (according to the package instructions). After cooking, drain them, rinse with cold water, and set aside to cool.
Step 2: Prepare the Remaining Ingredients Peel and thinly slice the red onion. Then dice the bell pepper, and halve the cherry tomatoes. Place all the ingredients in a bowl.
Step 3: Prepare the Dressing In a small bowl, mix olive oil with balsamic vinegar. Press the garlic through a garlic press and add it to the other ingredients. Finely chop the basil and add it to the bowl. Finally, season with salt and pepper. Mix everything with a fork to combine well.
Step 4: Combine the Ingredients Add the prepared dressing to the rest of the ingredients in the large bowl, sprinkle with Parmesan cheese, and mix. You can store this salad covered in the refrigerator for 2-3 days or serve it immediately after making it.
