Ingredients:
- nonstick cooking spray
- 1/2 cup unsalted butter (softened)
- 3/4 cup granulated sugar (for batter)
- 2 tsp. vanilla extract (for batter)
- 2 large eggs
- 1/2 cup sour cream (for batter)
- 1 3/4 cups all-purpose flour
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1 cup strawberries (fresh, finely chopped)
- 3 oz. cream cheese (softened)
- 1 tbsp. sour cream (for filling)
- 1/4 tsp. vanilla extract (for filling)
- 2 tbsp. granulated sugar (for filling)

Method of preparation:
Preheat the oven to 175°C (350°F). Spray a loaf tin with non-stick cooking spray.
In a large bowl, cream together the softened butter and 3/4 cup sugar until light and fluffy. Beat in the eggs one at a time, then the 2 teaspoons vanilla extract and 1/2 cup sour cream.
In a separate bowl, mix together the flour, baking powder, baking soda and salt. Gradually add these dry ingredients to the cream mixture and mix until just combined. Fold in the chopped strawberries.
In a small bowl, beat together the softened cream cheese, 1 tablespoon sour cream, 1/4 teaspoon vanilla extract and 2 tablespoons sugar until smooth.
Pour half of the mixture into the prepared loaf pan. Spread the cream cheese mixture on top. Top with the rest of the dough.
Bake for 55-60 minutes or until a toothpick inserted in the centre of the bread comes out clean. Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
