Quesadilla
- Black pepper, 0.5 tsp
- Halloumi cheese, 400 g
- Baby spinach, 100 g
- Tortilla, 6 pcs
Sauce
- Greek yogurt, 125 g
- Mayonnaise, 100 g
- Sriracha sauce, 3 tbsp
Preparation
Grate one halloumi cheese evenly over 3 tortillas. Then, spread baby spinach on the tortillas and grate the second halloumi cheese. Sprinkle with black pepper and cover with the remaining tortillas.
Mix all the sauce ingredients together in a bowl.
Place one prepared tortilla on a hot, dry pan. Press it down with a plate or pot. Cook on medium heat for about 5 minutes. Carefully flip and press down again. If the spinach releases water, extend the cooking time to reduce it. Repeat with the remaining tortillas.
Place the tortillas on a cutting board. Wait a moment, then cut into triangles and serve with the sauce.
