Spicy Zucchini Quesadillas

Delicious quesadillas with zucchini, cashew nuts, spiced up. An excellent dinner suggestion!


  • Avocado – 1 piece
  • Onion – 1 piece
  • Zucchini – 1 piece
  • Jalapeno pepper – 40 g
  • Olive oil – 1 tablespoon
  • Salt – a pinch
  • Lime – 0.5 piece
  • Cheddar cheese – 150 g
  • Cashew nuts – 40 g
  • Garlic clove – 1 piece
  • Tortillas – 4 pieces


Peel and grate the zucchini. Peel and finely chop the onion and garlic. Fry with zucchini in heated olive oil for 4-5 minutes, stirring occasionally. Season with salt. Finely chop the jalapeno pepper, coarsely chop the cashew nuts, and add both ingredients. Let it cool slightly.

Peel the avocado, cut in half, remove the seed, and slice thinly. Drizzle with lime juice. Grate the cheese.

Divide the zucchini mixture onto 2 tortillas, top with avocado slices, and sprinkle evenly with cheddar cheese. Cover with the remaining tortillas and press lightly. Fry the tortillas one by one in a heated pan for 1-2 minutes on each side until golden brown. Serve sliced. They taste great with tomato salad.
