Transform ordinary scrambled eggs into a dish inspired by Spain! Fried eggs, spicy sauce, and tortilla make a delicious breakfast idea.
Ingredients
- Onion – 1 piece
- Red chili pepper – 2 pieces
- Eggs – 8 pieces
- Olive oil – 1 tablespoon
- Parsley – 10 g
- Salt – 1 pinch
- Canned diced tomatoes – 400 g
- Garlic clove – 1 piece
- Tortillas – 4 pieces
Preparation
Finely chop the onion. Heat a little olive oil in a pan and sauté the onion until golden brown. Chop the garlic, add it to the pan. Add the canned tomatoes and sauté together, stirring occasionally, until the tomatoes break down.
Remove the seeds from the chili peppers and finely chop. Add to the sauce. Season with salt to taste and remove from heat.
Heat another pan. Brush the tortillas with oil and fry on both sides for about 30 seconds each. Remove from heat, cover, and set aside in a warm place.
In the same pan, heat a little oil and fry two eggs at a time over low heat until the egg whites are set.
Serving Arrange two eggs on each tortilla, spread the sauce between them. Finely chop the parsley, sprinkle over the eggs. Add salt to taste.
