Ingredients:
- 5 Yukon Gold potatoes, peeled and diced
- 2 tablespoons butter
- 1 tablespoon olive oil
- 1 yellow onion, chopped
- 2 sticks celery, chopped
- 1 green pepper, chopped
- 2 cloves garlic, chopped
- 1 pound andouille sausage, cut into round slices
- 4 cups vegetable or chicken stock
- 1 cup heavy cream
- 1 teaspoon Cajun seasoning, or to taste
- 1/4 cup grated Parmesan cheese
Method of preparation:
In a large saucepan or Dutch oven, heat the butter and olive oil over medium heat. Add the chopped onion, celery and green pepper. Cook until soft, about 5-7 minutes.
Add the chopped garlic and sliced andouille sausage to the pot. Cook until the sausage is browned and cooked through, about 5 minutes.
Stir in the peeled and chopped potatoes, then add the vegetable or chicken stock. Bring to the boil, then reduce the heat to low and simmer until the potatoes are tender, about 15-20 minutes.
Once the potatoes are cooked, use an immersion blender to blend the soup until smooth. Alternatively, transfer the soup in batches to a blender and blend until smooth, then return to the saucepan.
Stir in the cream and Cajun seasoning. Taste and season to taste.
Serve hot, garnished with grated Parmesan cheese and a sprinkle of Cajun seasoning for extra flavour.
