Spicy Lime Grilled Shrimp

  • 3 tablespoons Cajun seasoning (such as Emeril’s Essence)
  • 1 lime, juiced
  • 1 tablespoon vegetable oil
  • 1 pound medium shrimp, peeled and deveined (30-40 per pound)

Method of preparation:

In a bowl, combine the Cajun seasoning, lime juice and vegetable oil.

Add the shrimp to the bowl and toss to coat evenly with the marinade.

Preheat the grill to medium heat.

Thread the prawns onto skewers, piercing once near the tail and once near the head.

Place the skewers on the barbecue and cook for about 2-3 minutes on each side, or until the prawns are pink and cooked through.

Serve immediately, garnished with lime wedges or a sprinkle of extra Cajun seasoning if desired.
