Shrimp Scampi

Shrimp Scampi is an excellent choice for a quick weeknight meal or a sophisticated weekend treat. It’s versatile enough to be served over pasta, rice or with a side of steamed vegetables. The preparation is simple and the cooking time is short, making it the perfect dish for when you want something special without spending hours in the kitchen.


  • ¼ cup olive oil
  • ¼ cup lemon juice
  • 3 tablespoons of chopped fresh parsley
  • 1 tablespoon minced garlic
  • Ground black pepper to taste
  • ¼ teaspoon crushed red pepper flakes (to taste)
  • 1 ½ pounds medium prawns, peeled and deveined

Method of preparation:

In a large frying pan, heat the olive oil over medium heat.

Add the minced garlic and red pepper flakes and cook until the garlic is fragrant but not browned.

Increase the heat to medium-high and add the prawns to the pan. Season with black pepper.

Cook the prawns for 2-3 minutes on each side or until pink and opaque.

Drizzle with lemon juice and sprinkle with chopped parsley. Toss to combine and cook for a further minute.

Serve hot, garnished with more parsley if you like.
