An ideal addition to breakfast or dinner sandwiches.
Ingredients
- Whole coriander seeds, 1 teaspoon
- Dried rosemary, 1 teaspoon
- Ground black pepper, 1 teaspoon
- Sweet paprika, 1 teaspoon
- Garlic, 10 cloves
- Celery or parsley, 2 teaspoons
- Olive oil, 1-2 tablespoons
- Wild boar ham, 1.5 kilograms
- Water, 1/2 cup
- Fine-grain iodized sea salt, 2 teaspoons
Preparation
- Crush the coriander seeds in a mortar and pestle. Peel and crush the garlic cloves using a garlic press. In a bowl, mix all the spices.
- Rub the ham with the prepared mixture, place it in a bag, tie it, and refrigerate overnight.
- The next day, remove the ham from the bag, place it in a roasting dish, pour half a cup of water over it, and roast at 180°C for 1 hour to 1 hour and 20 minutes, basting it with the juices produced.
