Fig and Ricotta Sandwich

Fig and Ricotta Sandwich with pine nuts and lemon-vanilla honey


Sandwich with Fig and Ricotta:

  • 100 g ricotta cheese (homemade quick version from THIS RECIPE or store-bought)
  • 2 fresh figs, sliced
  • 3 tablespoons pine nuts
  • good quality bread
  • butter for spreading

Lemon-Vanilla Honey:

  • 2 tablespoons honey
  • 1 tablespoon lemon juice
  • a pinch of lemon zest (optional)
  • seeds from 1/2 vanilla bean


In a small bowl, mix honey with lemon juice and vanilla. Lightly toast the pine nuts in a pan.

Spread butter on the bread slices (you can toast them in a toaster), then spread ricotta on top. Arrange fig slices and sprinkle with pine nuts.

Drizzle with lemon-vanilla honey.
