Raw Autumn Harvest Soup

Packed with fresh, healthy ingredients, this soup is a powerhouse of nutrients that can help boost your immune system, especially as the weather turns cooler. With no cooking required, this soup is incredibly easy to prepare. It’s perfect for those days when you want something quick and satisfying.

Ingredients:

  • 3 white mushrooms
  • 2 heirloom tomatoes
  • 1/2 avocado
  • 1 cup organic sweet corn
  • 3 cups hot water
  • 1 tablespoon miso paste
  • 1 clove of garlic
  • 2 sliced mushrooms (marinated, see below)
  • 1/4 cup sweet corn
  • 1/2 avocado (diced)
  • basil leaves
  • ground pepper
  • pinch of salt

To make the marinated mushrooms:

  • slice the mushrooms, then toss in a little extra virgin olive oil and tamari or soy sauce.
  • leave in a warm place for 30 minutes or in the oven at a very low temperature for 10-15 minutes. they’re ready when they’ve darkened and softened.

Method of preparation:

In a blender, combine the 3 white mushrooms, heirloom tomatoes, 1/2 avocado, 1 cup sweet corn, hot water, miso paste and garlic clove.

Blend until smooth and soupy. Adjust to taste, adding water if necessary.

Prepare the marinated mushrooms as above.

Dice the remaining 1/2 avocado and set aside with the 1/4 cup corn and basil leaves.

Pour the blended soup into a bowl.

Top with the marinated mushrooms, diced avocado, sweet corn and basil leaves.

Season to taste with salt and pepper.
