Rabbit Liver with Onion

This is an excellent dinner dish, cheap and tasty. I recommend it to offal enthusiasts and beyond. Rabbit liver is often served at my table as well. It is prepared in the same way.

Ingredients

  • Rabbit liver, 8 pieces
  • Onion, 2 pieces
  • Cooking oil for frying
  • Milk for soaking
  • Fine-grain iodized sea salt to taste
  • Ground black pepper to taste

Preparation

Slice the onion into rings, brown it in oil. Add the rabbit liver (previously soaked in milk) and fry until tender. Season to taste. Serve with bread or potatoes.
