Rabbit and Cabbage Croquettes

A very simple recipe for delicious croquettes with delicate rabbit meat.

Ingredients

Pancakes:

  • Milk: 2 cups
  • Egg: 1
  • Salt: 1 teaspoon
  • Oil: 1 tablespoon
  • All-purpose flour: about 2 cups

Filling:

  • Sauerkraut: 1/2 kg
  • Onion: 2-3 pieces
  • Rabbit saddle
  • Rabbit legs
  • Salt and pepper
  • Sweet paprika, ground
  • Chili powder or ground cayenne pepper

Breading:

  • Egg
  • Classic breadcrumbs
  • Salt and pepper
  • Sweet paprika, ground

Preparation

Prepare pancake batter from the listed ingredients to the desired consistency. Fry the pancakes briefly so they don’t crack later. Peel the cooked meat from the bones and pass it through a meat grinder. Chop the onions and sauté them. Cook the sauerkraut and finely chop it. Mix all the filling ingredients with spices. Spread the filling on the pancakes, roll them up, then bread and fry.
