Prepare a delicious meal in no time – quick tortillas with peach salsa!
Ingredients
- Peaches, 400 g
- Garlic cloves, 2 pcs.
- Spring onions, 2 pcs.
- Chicken breast fillets, 500 g
- Hummus, 4 tbsp
- Whole cumin, 1 tsp
- Lime, 1 pc.
- Fresh mint, 2 g
- Olive oil, 1 tbsp
- Red chili pepper, 1 pc.
- Tortillas, 4 pcs.
Preparation
Step 1: Dice the Peaches
Combine the marinade ingredients.
Season hummus with lime juice and 1 tbsp chopped mint. Dice ripe peaches (or canned ones) into small cubes. Season with chopped red chili pepper, lime juice, olive oil, and two tbsp chopped mint. Add spring onions, finely chopped, and garlic. Season the chicken with salt, pepper, and cumin (or oriental seasoning).
Step 2: Grill the Chicken in a Pan
Grill the chicken in a pan. If necessary, finish cooking it in the oven. Then, while still warm, slice it into pieces.
Step 3: Arrange the Ingredients on the Warm Tortilla
Warm the tortillas briefly in a pan to prevent them from drying out. Spread hummus on them, arrange chicken slices, and drizzle with peach salsa. Roll them up. Serve warm or cold – if serving cold, add the salsa at the end for decoration.
